I had the most delicious hot pink borscht at Granville Island last week. It had rice instead of potatoes, was chunky and vegetarian and above all was hot pink, not deep burgundy and not mixed up with cream. It had celery in it but not carrots. I long to make it at home but am having trouble finding a recipe to start from.

It may take me a few days, because my grandma doesn't believe in the Internet, but I can try to find her recipe for you. (I think the rice would make it lighter in hue, as would blending some of it, or as we do - eating it with sour cream)

I've never had borscht. I love roasted beets, but something about beets in soup makes me feel weird.

I think the beets in this particular soup must have been few and blended, Mr Gander. Also I have a major thing for soup. I have a recipe for chocolate cake moistened by blended beets that is just to die for. The beets bring out the mineral flavour in the chocolate.
